There is a popular idea in wellness marketing that a short ingredient list automatically means a better, healthier, cleaner product.

It is an appealing idea. It is also too simple to be accurate — and an evidence-literate athlete deserves a more honest account than the marketing version.

This post does not argue that fewer ingredients automatically make a better fuel.

It argues something more specific and more defensible: a short, recognisable ingredient list is a useful transparency signal and, for some athletes, a practical gut-tolerance consideration — while remaining neutral on the broader and genuinely contested question of whether food processing itself drives health outcomes.

What the Science Actually Says About "Processing"

The most common framework cited in clean-label discussions is the NOVA classification system, developed by researchers at the University of São Paulo, which categorises foods into four groups by degree and purpose of processing — with "ultra-processed foods" as the most-processed category.[1]

Under NOVA, many conventional energy gels — built on maltodextrin with added flavours, preservatives, and stabilisers — would likely fall within the ultra-processed category.

It would be easy to stop there and conclude that ultra-processed gels are therefore worse. But the honest scientific position is more nuanced. A 2025 critical review by Louie, published in Proceedings of the Nutrition Society, examined the assumption that all ultra-processed foods are uniformly harmful and found substantial heterogeneity in health outcomes across different ultra-processed food types — with products such as sugar-sweetened beverages consistently associated with adverse outcomes, while fortified cereals and certain dairy products demonstrate neutral or even protective effects.[2]
